Phirni / Rice Pudding

Phirni / Rice Pudding


Basmati Rice – 1/2 cup, soaked, drained well
Milk – 1 cup
Sugar – 2 tblsp
Condensed milk-3 tblsp
saffron – 4 to 5 strands
Rose water - 1 tblsp
cardamom crushed -1tsp
Almonds – 3 tblsp, blanched, peeled, sliced
Cashew Nuts – 3 tblsp
Pistachios – 3 tblsp, sliced


Grind the boiled rice to a coarse powder.

Crush the cashews,sugar almonds and pistachios.

Crush the saffron strands with 2 tblsp of milk.

Heat milk in a pan and add sugar to it.

Once it comes to boil, add the rice paste.

Add condensed milk and black raisins to it.

Also add saffron milk .This gives a nice yellow color. Stir well and simmer for a few minutes.

Finally add the rose water. Remove from flame after a minute or two. 

Remove it t a serving bowl and garnish with black raisins, pistachios and almonds.
