Vanilla Sponge Cake / Basic Sponge Cake




 
My measurements: 1 cup = 120g
 
Ingredients:
  • All purpose flour - 1 cup
  • Baking Powder - 3/4 tsp
  • Baking soda - a pinch
  • Eggs - 2
  • Sugar - 3/4 cup
  • Vegetable oil - 1/4 cup
  • Vanila Extract - 1 tsp



Method:
 
Preheat oven to 350 degrees F / 175 deg. Prepare a 4 inch baking pan with parchment paper as handles and butter, set aside.
 
 
Separate egg whites and yolk.  Add powdered sugar to the egg whites and beat them until soft and fluffy. Add in milk to it.
 
 


To the egg yolks, add vegetable oil and vanilla essence and mix well.. Beat it until it becomes light and fluffy.
 
 
 
 In a bowl sieve all the dry ingredients like flour,baking powder and baking soda.  


 
Now add in the egg white mixture and the egg yolk mixture to the dry ingredients and fold gently. 
 
Pour the cake mixture to the 4 1/2 inch cake pan and tap little to remove air poles. Bake it for 30 min at 175 deg or 350 F. 
 
 
Transfer the cake into wire rack and cool it. Sprinkle some powdered sugar over it. Slice and serve.
